Bowl of Proteins, Veggies and Greens

Hope you all are doing great! 

Sometimes it is challenging to keep up with healthy eating.  And so, I mix it up a little with my recipes to make my taste buds to like healthy food. One of the mixed-up recipes I eat is this Bowl full of Proteins, Veggies, and Greens. And I and surprised it tastes so delicious. I have grown up eating traditional Indian food full of spices, making it difficult to cut the spice out of my food. So, all the ingredients in the Bowl are cooked with Indian spices. 

The Protein in the Bowl is Mung Bean Sprouts. Recently my doctor told me to include protein in every meal. Since my husband and I are both vegetarian, we have limited options for protein, one of which is Mung Bean. I have used different veggies cooked in Indian Spices, and the greens are basically kale and romaine lettuce.

Also, it is boring to just eat greens at a single time or only veggies separately, so I add portions of them to make it a Bowl. It also helps me to control my food intake portion. Hope you enjoy this recipe, and it helps you to be on track with healthy eating.


Mung Sprouts

Ingredients
  • 2 tbsp oil
  • 1/4 tsp mustard seeds     
  • 1/4 tsp cumin seeds
  • 2 cups Mung Sprouts
  • 2 cups water
  • 1 tsp salt
  • 1/2 tsp turmeric powder
  • 3/4 tsp cumin-coriander powder
  • 3/4 tsp Kitchen King Masala (KKM)
  • 1/4 tsp red chili powder
  • 5 to 6 curry leaves
  • 1/2 tsp chopped coriander
Instructions
  1. Heat the oil in the pan.
  2. Add mustard and cumin seeds and wait till they crackle, and add curry leaves.
  3. Add the mung sprouts and water and let the water boil.
  4. Add turmeric, cumin-coriander powder, KKM, red chili powder, and salt.
  5. Stir and let it cook for 15 min or until 80% water evaporated.
  6. Cover with the lead and cook for another 10 min or till no water is left.
  7. Garnish with fresh green coriander
                                                
                                        

                        
Veggies

Ingredients
  • 1/2 small Jalapeno chopped
  • 2 any color medium sweet pepper
  • 1 cup onion, carrot, beet chopped
  • 1 cup broccoli chopped
  • 2 Garlic cloves chopped
  • 1 small piece of ginger grated
  • 1/2 tbsp oil
  • 1/2 tsp salt
  • 1/4 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp cummin-coriander powder
  • 1/4 tsp Kitchen King Masala (KKM)

Instructions
  1. Chop all the veggies in a similar kind. I have chopped in a finely diced manner.
  2. Heat oil in a pan and add all the chopped veggies.
  3. Add salt, garlic, and grated ginger and saute.
  4. Add red chili powder, turmeric, cumin-coriander powder, and KKM.
  5. Saute all the veggies for 10 min.
  6. Cover the lid and cook for 5 min.


        



Green

Ingredients
  • 1 cup Kale leaves
  • 1 cup Romain Lettuce
  • 5 to 6 cherry tomatoes sliced in halves
  • 1 tbsp grated parmesan cheese
  • 1/2 tbsp olive oil
  • 1/2 tbsp Feta cheese 
  • 1/4 tsp chili flakes
  • 1/4 tsp crushed black pepper
  • 1/4 tsp salt
Instructions:
  1. In a bowl, soak the kale leaves and romaine lettuce in ice water.
  2. Rinse the water and let all water flow out of greens, or use a salad spinner.
  3. In a bowl, take dried greens and add cherry tomatoes. 
  4. Add olive oil, grated parmesan, chili flakes, black pepper, and salt.
  5. Mix it well.

       




Serving
  • In a salad bowl, add greens, veggies, and beans in three parts.
  • Add feta cheese.
  • I like my greens as is; if you wish, you can add any dressing of your choice.
