Mixed Vegetable Soup

 Hello everyone,

Winter is here!!. And in this cold atmosphere, one of the hit items that we enjoy is Niru mom's mixed vegetable soup. This is originally my MIL's recipe. But I make it with some variance, and it tastes so delicious. Mixed vegetable soup is very healthy as there are a lot of vegetables in it. It is easy to make and yummy to eat. It pairs really well with a grilled cheese sandwich and salad.




Ingredients :
  • 2 tbsp oil
  • 1/4 tsp cumin seeds
  • 1/4 tsp chili flakes
  • 4 cloves
  • 1 small piece of cinnamon
  • 5 whole black pepper
  • 1 small piece of ginger 
  • 4 cloves of garlic
  • 1 small onion peeled and diced 
  • 1/2 bottle gourd peeled and diced
  • 2 tomatoes diced
  • 1 small potato peeled and diced
  • 1/4 beet peeled and diced
  • 1 carrot peeled and diced
  • 1/4 cup of chopped green onions
  • 2 cups water
  • 1 tsp salt
  • 1 tsp jaggery or sugar
  • 1 tsp of tomato ketchup
Instructions:
  1. In a pressure cooker, take all veggies - onion, bottle gourd, tomatoes, potato, beet, carrot, garlic cloves, and ginger.
  2. Add cloves, whole black peppers, cinnamon, and pressure cook for five whistles. You may also use IP (Instant Pot) to pressure cook all the spices and veggies.
  3. Once cooked, let it cool down and grind in the grinder to a soupy consistency.
  4. Heat the oil in the pan.
  5. Add cumin seeds and chili flakes and let them crackle
  6. Add the grinded veggies and spices to the pan.
  7. Add water and bring it to a boil.
  8. Heat the oil in the pan.
  9. Add mustard and cumin seeds, wait until they crackle, and add curry leaves.
  10. Add jaggery and ketchup and mix it well.




Serving: 
  • Serve in the soup bowl.
  • Garnish with green onions
  • Add Croutons, I have used Deep's Garlic mini Toast.
  • And ENJOY!!



Notes:
  • You can add veggies of your choice or remove those you don't like from the ones mentioned above.
